Celebratory Dinner


Tuesday night we had a little celebration. It's a new month (when hopefully spring will appear) and we had another reason to celebrate (that I'll share later). Anyway, I just cooked up what was planned for the day- Chinese meatballs with red peppers, pineapple, and peas on rice. It's hard to admit, but I've really been enjoying cooking these past couple of weeks.
The rest of the menu this week was:
Chicken & Mushroom Tortellini with Veggies & Dip
Oven BBQ Chicken with Roast Potatoes & Broccoli
Asian Salmon with Pasta & Asparagus
Creamy Chicken & Rice Soup with Multigrain Buns


My honey also picked up this gorgeous Tuxedo Cake from Costco.


It was divine with layers of chocolate cake and chocolate mousse topped off with chocolate ganache. It was worth the calories- yum!

Chicken Kabobs


This week I cracked open a cookbook I got back in 2003. It's called "Cooking for the Rushed- The Healthy Family" by Sandi Richard. You may know Sandi from her TV show "Fixing Dinner." Anyway, I love love love this book! It's divided into 7 weeks of dinner menus with 5 recipes for each week. (There's always pizza night, restaurant dates, get togethers, and leftovers for the other 2 days of the week). She also has convenient grocery shopping lists for each week on her website. How fabulous is that?

The above meal is Peanut Satay Chicken Kabobs with Spinach Salad and Multigrain Buns, and it was so easy and delish! The other meals this week are:

Tangy Slow Cooker Roast with Potatoes and Peas
Macaroni Lasagna with Veggies and Dip
Dijon Baked Chicken with Rice and Broccoli

I really think I should add some more of her cookbooks to my collection!
